The egg white, when shaken, g...Grrrrrreat Question! The egg white, when shaken, gives the drink a creamy froth, which rises to the top ... and gives the drink a "milkshake-like" texture. Not too thick, but just thick enough to make it interesting. :) <br /><br />That's where the "Fizz" comes in. <br /><br />I know that salmonella is a concern, but I've been eating raw cookie dough and drinking fizzy drinks for some time now, and never any trouble (knock on wood) ... so I think the chances are relatively slim. <br /><br />Just maybe stick to making them yourself, with fresh eggs ... or ordering them at a bar where the bartenders REALLY take pride in / know what they're doing. Makes a big difference. This is definitely not a "dive bar" drink.
